La dieta dei vegetariani indiani è estremamente varia, nutriente e sostanziosa. In mancanza di burro,latte e uova, le proteine vengono fornite tramite un largo impiego di legumi secchi. Le verdure fresche abbondano e oltre ad essere cucinate in una gra varietà di curry,vengono servite come spuntini per tutte le ore.
Esistono molte varietè di pakoras; la ricetta base consiste in una specie di frittella che nelle diverse regioni viene preparata in maniera diversa: al nord è poco più di una pastella di Besan ( farina di ceci), aromatizzata e piccante; nell'India centrale contiene anche verdure tritate finemente, nel sud è un bocconcino ricoperto di pastella.
In qualsiasi modo si preparino le <em>pakoras</em> sono bocconcini gustosissimi che si servono con una salsina piccante e armatizzata.
